Ceylon cinnamon powder — finely ground true cinnamon (Cinnamomum verum) with a delicate, citrusy-sweet flavour.

Ceylon takes its name from Sri Lanka, where this original "true" cinnamon is native — Ceylon was the island's former name. Lighter in colour than the everyday cassia variety, it is softer and more fragrant on the palate, and naturally low in coumarin, which is why regular cinnamon users often make it their daily spice. Harder to find and a little dearer than cassia, but worth it where finesse matters.
